Ingredients: Quarter of a cabbage,4 large potatoes,half a celery,1 leek,4 vegetable stock cubes,half a cup of barley,2 carrots,1 onion,2 tins of tomatoes,3 dessert spoons of tomato puree,salt and pepper.
Method: Put 2 pints of water in a large pan with the stock cubes,a small handful of chopped herbs,salt and pepper and half a cup of barley.Simmer on medium heat.Peel ,top and tail and finely chop the carrots,onion,leek and celery,Finely chop the cabbage,and thinly slice 2 potatoes and dice the other 2,if washed whites do not peel.Wash all vagetables and put in the pan except the sliced potatoes.Add the tomato puree and chopped tinned tomatoes.Cook for half an hour.Simmer the sliced potatoes in a separate pan for 5 minutes.Put all of the vegetable mix in a serving dish and cover with the sliced potato after you have cooled it a little with cold water so you can handle it.Put in a hot oven 200oc gas mark 6 for 10 minutes or brown under the grill.

Ingredients : 1lb penne pasta,1 onion,2 carrots,3 vegetable stock cubes,salt and pepper,1 large tin pilchards in tomato sauce,small bunch coriander

Method : Put two pints of water in a large pan and bring to the boil.Add peeled and chopped onion,peeled,topped and tailed and sliced carrots and pasta.Cook for 10 minutes and drain leaving about 1 cup of water in bottom,keep on a low heat,add some of the coriander chopped,salt and pepper,3 crumbled stock cubes,and the tinned pilchards in tomato sauce and mix in.Put in a serving dish and garnish with a sprig of coriander.Serve with salad and enjoy this healthy meal good for all the family.

Baked Mackerel With Lime
Ingredients : 4 mackerels,salt,pepper 2 limes,2 tomatoes,parsley,olive oil.
Method : Gut and wash the mackerels.Put cuts along the tops of the fish on both sides and season.Rub with a little olive oil.Grill for 10 minutes turning them over after 5 minutes.Serve with chopped parsley and tomato and lime with salad.

Fish Pie
Ingredients ; 1 lb plain flour,half pound of margarine,water,,1 onion,1 teaspoons of English mustard,,1 onion. Half a pint of milk,2 dessert spoons of cornflour,4 coley fish fillets, salt, pepper, mixed herbs, 2 vegetable stock cubes.
Method : Rub in the margarine and flour until crumbly, add water to make the pastry dough. When you have made the dough leave it to rest. Peel and finely chop the onion, then boil it in a third of a cup of water in a pan. Add the milk, mustard, salt pepper,stock cube, herbs and fish. Simmer for 10 - 15 minutes and thicken with a the cornflour mixed with cold water. Stir with a spoon to let much of the heat out. Get an oven plate or pie dish and rool and line the bottom with pastry. Put in the fish mix in sauce and add a pastry top. Rub the top with a little milk to brown. Cook in the oven 170 degrees c or gas mark 5 for 20 minutes until golden brown. Great with salad or potatoes and vegetables

Tuna And Sweetcorn Pasta Salad
Ingredients ; 1 small bag penne pasta,1 small tin of tuna,1 small tin of sweetcorn,a small jar of mayonnaise.parsley,salt and pepper.
Method :Cook the pasta for 10 - 15 minutes in boiling water until all dente just cooked. Run it under cold water for 5 - 10 minutes until cold. Put in a large bowl add salt and pepper, chopped parsley, sweetcorn,3 heaped dessert spoons of mayonnaise and a small tin of tuna. Makes a nice addition to a salad or on its own.

Frittata 4 Portions
Ingredients :2 large potatoes,1 onion,3 garlic cloves,a quarter pound of mushrooms,1 broccoli head,4 vegetable stock cubes,salt,pepper,a small handful of grated cheese,9 eeggs,1 and half pints of milk,1 large teaspoon of English mustard,oil.
Method: Wash the potatoes and dry if skins are clean dice small if not peel and dice and lightly fry in a little oil until golden brown.Peel and chop the onion and garlic,and chop the broccoli and slice the mushrooms and wash and drain well.Whisk the cracked eggs in a bowl add the milk,cheese,mustard,salt and pepper,crumbled stock cubes,grated cheese.Put all the mix in a baking tray like this and add the other ingredients including the diced potatoes drained from oil.Bake in the oven 180oc or gas mark 5 for 40 minutes until golden brown.serve with salad after you have cut it into nice rectangle pieces and got it out carefully with a slice.Great for the family and filling.

Vegetable Sweet And Sour 4 Portions
Ingredients : 1 red pepper, 1 green pepper, half a pineapple, or 1 small tin, 3 dessert spoons of vinegar, 2 dessert spoons of sugar, 1 large onion, 2 cloves of garlic, half a teaspoon of cinnamon, half a teaspoon of ginger or a bit more fresh grated, 2 chicken stock cubes, 1 x 3lb chicken, salt, pepper, 2 dessert spoons of cornflour, half a cup of cold water,2 tims of plum tomatoes, 2 heaped dessert spoons of tomato puree, half a teaspoon of ground mixed spice.
