On this link, I will be showing you a wide variety of fish and dishes that they will be used in. The general types of fish are round fish and flat fish. The round fish examples are - trout, mackerel. salmon, sea bass, whiting, cod etc, there are many but you get the understanding of the shape. The flat fish examples are - plaice, brill, dover sole, halibut, dab etc. These fish tend to swim at the bottom of the sea on the bed while the round fish swim mostly in shoals through the currents of the sea or rivers in the case of trout and salmon etc. While fish is fishy in smell not all fish taste the same and there are a wide variety of ways to prepare and cook them. On this website I will cover many of the common fish and the dishes. Remember round fish especially mackerel is rich in omega 3 oils which are great for your heart and arteries and all the joints in your body.

Mediteranian Pasta
Ingredients : 1lb penne pasta,1 onion,2 carrots,3 vegetable stock cubes,salt and pepper,1 large tin pilchards in tomato sauce,small bunch coriander

Method : Put two pints of water in a large pan and bring to the boil.Add peeled and chopped onion,peeled,topped and tailed and sliced carrots and pasta.Cook for 10 minutes and drain leaving about 1 cup of water in bottom,keep on a low heat,add some of the coriander chopped,salt and pepper,3 crumbled stock cubes,and the tinned pilchards in tomato sauce and mix in.Put in a serving dish and garnish with a sprig of coriander.Serve with salad and enjoy this healthy meal good for all the family.

Baked Mackerel With Lime
Ingredients : 4 mackerels,salt,pepper 2 limes,2 tomatoes,parsley,olive oil.
Method : Gut and wash the mackerels.Put cuts along the tops of the fish on both sides and season.Rub with a little olive oil.Grill for 10 minutes turning them over after 5 minutes.Serve with chopped parsley and tomato and lime with salad.

Poached Whole Salmon
Ingredients : 1 Salmon,parsley,salt,pepper,water,1 lemon.
Method : Gut and wash the salmon.Half cover the salmon in a large tray if you do not have a salmon kettle.Add parsley,salt,pepper and two halves of lemon.Simmer on medium heat 10 - 15 mins to the pound.A 5 - 6 lb salmon should take about an hour.Cover the tray with tinfoil or a lid when you start cooking it.When it is cooked probe it to70 degrees centigrade.Let it cool, for half an hour,then put it on a tray,cover and leave in the fridge over night.Work decorating it the next day.Perfect for buffets.

Ingredients ; 1 lb plain flour,half pound of margarine,water,,1 onion,1 teaspoons of English mustard,,1 onion. Half a pint of milk,2 dessert spoons of cornflour,4 coley fish fillets, salt, pepper, mixed herbs, 2 vegetable stock cubes.
Method : Rub in the margarine and flour until crumbly, add water to make the pastry dough. When you have made the dough leave it to rest. Peel and finely chop the onion, then boil it in a third of a cup of water in a pan. Add the milk, mustard, salt pepper,stock cube, herbs and fish. Simmer for 10 - 15 minutes and thicken with a the cornflour mixed with cold water. Stir with a spoon to let much of the heat out. Get an oven plate or pie dish and rool and line the bottom with pastry. Put in the fish mix in sauce and add a pastry top. Rub the top with a little milk to brown. Cook in the oven 170 degrees c or gas mark 5 for 20 minutes until golden brown. Great with salad or potatoes and vegetables

Put in a large bowl add salt and pepper, chopped parsley, sweetcorn,3 heaped dessert spoons of mayonnaise and a small tin of tuna. Makes a nice addition to a salad or on its own.

Ingredients : 4 Mackerels,1 lemon,salt,pepper,parsley,olive oil.
Method : wash, gut and prepare the mackerel. Put three incisions on either side of the fish. Sprinkle with a little olive oil and salt and pepper. Squeeze a little fresh lemon on them. Make sure they are on a baking tray and grill for 10 - 15 minutes turning the fish over half way to cook on both sides. Great served with salad.

Preparing Trout For Grilling
Ingredients : 4 trout,salt,pepper,olive oil,1 lemon,parsley.
Method : Wash and gut the trout and wash again inside. Trim off the fins and then make three incisions on either side of the fish to bake or grill.

Tomato Pilchard Pasta Bake
Ingredients : 1 small bag of penne pasta,2 tins (mugs) of plum tomatoes,salt,pepper,3 vegetable stock cubes,2 dessert spoons of tomato ketchup,1 tin of pilchards in tomato sauce,parsley,1 onion,3 garlic cloves.,water.
Method : put the pasta in about two pints of boiling water. Stir it so it does not stick. Peel and finely chop the onion and garlic.Cook In a cup full of water, then add the salt, pepper, chopped parsley, stock cubes, ketchup, pilchards and chopped tinned tomatoes. After 10 - 15 minutes the pasta will be cooked. Drain the pasta then add to the sauce and you have a nice healthy meal. serve
with salad.

Crispy Goujons Of Fish
Ingredients : 2 fillets of hake Batter -,2 dessert spoons of vinegar,salt,pepper,half a cup of plain flour,1 teaspoon of baking powder,half to three quarters a cup of water,1 pint of vegetable oil.
Method : For the batter Whisk up the flour,baking powder, water and vinegar together with a little salt and pepper. Cut the fish into diagnel strips and put the oil in a pan to heat up or ideally put your fryer on. When the oil is hot coat one strip of fish at a time and cook in the oil until golden brown and crispy. Tip out of basket onto kitchen roll and squeeze some lemon over for flavour. Great with wedges and salad.

Ingredients : 2lbs of potatoes,2 onions,6 mushrooms,salt,pepper,3 fish or vegetable stock cubes,1 green pepper,2 eggs,1 pint of milk,half lb of prawns,4 hake fillets,2 teaspoons of English mustard,parsley,3 dessert spoons of cornflour.
Method : Peel wash and cut up the potatoes. Peel and rough chop the onions, mushrooms and peppers. Boil the potatoes for 15 - 20 minutes until soft. Take a cup of water, put it in a pan and add the onions and bring to the boil. Then add the milk and all of the other ingredients except the cornflour. Mix the cornflour with a little cold water until dissolved and stir in slowly to thicken the mix. When the potatoes are cooked drain them and mash with the eggs, some milk,salt pepper and a little mustard. Put the fish mix in the pie dish and cover a little at a time with the mash. Use a fork to get a nice pattern. Then bake in a hot oven for 10 - 15 minutes until golden brown.

Ingredients : 1 onion,4 scallops,half a pound of king prawns,parsley,1 lemon,salt,pepper, 1 red pepper, olive oil

Cook with a lid on for 5 minutes and then add the peppers and parsley for a further 5 minutes stirring. It is ready to serve with pasta, rice or salad.

Put a few spoonfuls on each circle of pastry on one side. then fold it over. Double fold the edges. Make sure they are all on a baking sheet.Brush the tops with egg wash or a little milk. Bake in the oven for 15 - 20 minutes at about 180 degrees centigrade or gas mark 6. They will be golden brown when ready and great served with potatoes, vegetables and salad.

Simmer 10 - 15 minutes and then thicken with the cornflour mixed with water. Add the tuna and then mix in the pasta. Mix it up well. This is great served with salad. It can be topped with cheese and grilled but that adds more fat content, so I would go with the healthy option.

Ingredients - 1 onion,1 large potato,2 boneless fillets of fish,3 vegetable stock cubes,2 pints of water,salt and pepper,cornflour, 1 teaspoon of tomato puree,1 dessert spoon of tinned plum tomatoes
Method - peel and finely chop the onion, potato and fish. Put in a pan with the water, add 3 crumbled stock cubes and salt and pepper. Put in the tomato and puree.Boil for a few minutes and then simmer for half an hour.Stir every 5 minutes.Add 1-2 spoons of cornflour dissolved with an inch of cold water in a mug. Stir this with a spoon or fork and it will go watery.Add a little at a time until your soup goes as thick as you like it. Enjoy a good virtually fat free lentil healthy soup.Garnish maybe with a bit of chopped parsley and a nice piece of crusty cob.
