Introduction
Hi to you all, on this link I am going to give you some recipes to cook that are easy.
Well what is a vegan? Some vegans are different to others but generally a vegan eats fruit, vegetables, beans, seeds and nuts. Some vegans will have some dairy products while others do not have any. Vegans do not eat meat or fish.
Being a vegan can be healthy but you must always look carefully into your meals that you are getting all the essential proteins, nutrients, minerals and vitamins. Make sure, as you do not eat meat or fish as protein that you have plenty of beans, peas, pulses or nuts etc in your meals to make up for that lack of protein. You need to keep your muscles and body in good repair, and proteins help to do this. Do not live on snack food and chips as doing something healthy by becoming a vegan will make you very un - healthy

Chunky Vegetable Broth 4 Persons
Ingredients : 1 small leek,1 onion,1 carrot,1 stick of celery,2 vegetable stock cubes,1 tin of tomatoes,2 dessert spoons of tomato puree,a good pinch of mixed herbs,salt and pepper,1 large potato.2 pints of water.
Method : Peel,,top and tail and finely chop and wash all of the vegetables.Put all of the ingredients in the water and bring to the boil.Then simmer for half an hour.If needed thicken with a little cornflour and cold water but probably not.A good healthy meal in itself.

Spicy bean soup 4 Persons
Ingredients:1 onion,2 vegetable stock cubes,half a small tin kidney beans,half a small tin of baked beans,2 heaped dessert spoons of tomato puree,salt and pepper,1 tin of finely chopped tomatoes,two pints of water,2 finger chillis,cornflour.
Method : Peel and finely chop the onion and two fresh chillis.Put in the water and simmer in a pan for 15 minutes.Add everything else and simmer a further 15 minutes.If it needs to be thickened mix a little cornflour with cold water and thicken by mixing in.Remember if it has reduced you will need to have added a little more water to bring it back to two pints for 4 people.This will be spicy,if you don,t like it too spicy try one less chilli or half a chilli.A great winter warmer

Carrot & Tomato Soup 4 Persons
Ingredients :2 carrots,1 onion,2 vegetable stock cubes,salt and pepper,1 tin of tomatoes or half pound of overripe tomatoes,2 pints of water.
Method : Peel,wash and top and tail the carrots.Peel the onion and finely chop both.Put in the water in a pan with everything else and simmer for 1 hour.Keep an eye on the water and if it goes down top it back up to where it was.When cooked hand blend until there are no lumps.If there are any bits run the soup through a strainer with a ladle or large spoon.This soup should thicken itself and look like the picture.A good healthy virtually fat free soup.If you want a bit of colour add chopped parsley.

Method : Peel the squash,top and tail.Cut in half lengthways,then half again, to get 4 quarters.Remove the seeds,then finely chop,peel and finely chop the onion,peel wash and finely chop the potatoes.Put all of the ingredients in a pan with the water and simmer for half an hour.When it is cooked blend it with a hand blender.Check the stock cubes if you are gluten free otherwise great.

Ingredients: Quarter of a cabbage,4 large potatoes,half a celery,1 leek,4 vegetable stock cubes,half a cup of barley,2 carrots,1 onion,2 tins of tomatoes,3 dessert spoons of tomato puree,salt and pepper.
Method: Put 2 pints of water in a large pan with the stock cubes,a small handful of chopped herbs,salt and pepper and half a cup of barley.Simmer on medium heat.Peel ,top and tail and finely chop the carrots,onion,leek and celery,Finely chop the cabbage,and thinly slice 2 potatoes and dice the other 2,if washed whites do not peel.Wash all vagetables and put in the pan except the sliced potatoes.Add the tomato puree and chopped tinned tomatoes.Cook for half an hour.Simmer the sliced potatoes in a separate pan for 5 minutes.Put all of the vegetable mix in a serving dish and cover with the sliced potato after you have cooled it a little with cold water so you can handle it.Put in a hot oven 200oc gas mark 6 for 10 minutes or brown under the grill.
