Mediteranean Salad
Ingredients : olives, 1 orange, 1 tomato, half a cucumber, 1 onion, lettuce, coriander, salt, pepper, olive oil.
Method - If the olives have stones in them,cut them out.Slice the orange and wash and cut the tomato into wedges,peel and slice the onion,wash and chop the lettuce,coriander and cucumber. Sprinkle with a little salt and pepper and olive oil then enjoy your salad.

Pineapple
Ingredients : 1 pineapple, 1 orange.
Method - Slice the orange. Then cut the pineapple into six wedges. cut out the woody strip along the middle.then slin the pineapple and slice into wedges.Cut orange slices into wedges and put a piece between each segment.

Egg Mayonnaise
Ingredients : 4 eggs, paprika, Or cayenne pepper, Rocket lettuce, 4 tomatoes (any kind you like), 1 small jar of mayonnaise.
Method - Boil four eggs in boiling water for approx 6 minutes.Then let them run under cold water for a while while they cool down.Wash and slice tomatoes and lettuce.Cut eggs in half and put face down on a bed of lettuce.Put some mayonnaise over the top.Finish with a little salt and pepper and a sprinkle of paprika.

Fanned Melon And Strawberries
Ingredients : 8 strawberries, 1 honeydew melon, 1 orange,1 kiwi fruit.
Method - Peel and wash the kiwi.Then slice the kiwi,orange and strawberries.Cut the melon in half and remove the seeds, then cut each half into four.Skin the melon.Then slice the melon into strips without going through completely.Move into a fan position on a nice white plate.twist the orange and arrange the other fruit around as you wish.

A Cocktail Of Assorted Berries
Ingredients : 10 strawberries,a cup full of blackcurrants, half a cupful of redcurrants, A handful of cherries.
Method - Wash the berries and currants.Take off any stalks and heads off the strawberries.Then cut the strawberries if needed.Arrange in a glass a few at a time to get a mix. enjoy a fruity starter.

Fruit Salad
Ingredients : 1 carton of fresh orange, 1 handful of overripe gooseberries, 1 kiwi fruit, half a melon, 6 strawberries, 1 apple, 1 orange.
Method - Peel and wash the gooseberries and the apple.Take the core out of the apple.Wash the gooseberries and cut in half,put in the glass with chopped kiwi,strawberries,apple,skinned and de-seeded melon.Put a slice of orange over the edge of the glass or around the side and add some fresh orange juice.

Frittata
Ingredients : 3 medium sized potatoes,oil,6 eggs, 1 pint of milk, 1 onion, 6 mushrooms, 1 broccoli head, salt, pepper, 2 stock cubes,mixed herbs, Parsley.
Method - Peel ,dice and wash the potatoes. wash and chop the parsley,broccoli, and mushrooms. crack the eggs into a bowl, whisk and add the milk and mix in. Peel and finely chop the onion. Put all of the ingredients in an oven tray or dish. season with salt and pepper and crumble over the two stock cubes. Add the egg mix and bake in the oven 160 degrees or gas mark 5 for around 40 minutes until it is golden brown and set like a quiche. Allow to cool a few minutes before cutting it.

Add the egg mix and bake in the oven 160 degrees or gas mark 5 for around 40 minutes until it is golden brown and set like a quiche. Allow to cool a few minutes before cutting it.
Carribean Chicken
Ingredients : 1 chicken, 1 pint of vegetable oil, 1 heaped teaspoon of ground mixed herbs, 2 dessert spoons of curry powder, 2 dessert spoons of plain flour, salt, pepper, 1 chicken stock cube.
Method - Get yourself an oven tray and crumble the stock cubes and mix all of the dry ingredients together. Cut the chicken into breasts and legs, then half all of them. Rub all of the chicken pieces in oil and then coat in the dry mix. Press all of the dry mix into the chicken until it has gone on all of it. Then bake in the oven 170 degrees centigrade or gas mark 5 for 40 minutes until golden brown. This works best if the chicken is left to marinate over night covered in the bottom of the fridge, then re- coated the next day. Enjoy your chicken it is tasty.

Ingredients : 2 oranges, 1 grapefruit, mint, 4 pineapple rings, 4 glace cherries.
Method - Peel the orange and the grapefruit and cut into segments without any pith. Arrange them neatly on a large pineapple ring on a sweet plate. Put a cherry in the middle and add some mint and you are done.

Stuffed Peppers
Ingredients : 4 small peppers, 1 cup of long grain rice, 2 dessert spoons of kidney beans, 2 dessert spoons of sweetcorn, 1 small onion, 1 vegetable stock cube, salt, pepper, mixed herbs.
Method - Put 1 pint of water in a pan with the crumbled stock cube, salt and pepper, and mixed herbs.Add the rice and stir. Simmer for 10 minutes and then add the washed kidney beans,onion and sweetcorn. Simmer for a further 5 minutes. Allow to cool and then cut the peppers in half and fill with the mix. Put in the oven only to get hot or eat cold with salad

Ingredients : 1 pint of milk semi skimmed, half a pound of plain flour, 2 heaped dessert spoons of low fat margarine or butter, 2 tomatoes, half a mug of cold water, 1 handful of grated cheese, 6 eggs, salt, pepper, mixed herbs.
Method - Crumble the flour and the margarine by rubbing between your fingers. Add a little water to make the pastry. If dry add a little more water and knead it in. If wet add a little more flour. Roll it out thinly and line a flan dish Whisk the eggs and milk together and add salt and pepper, mixed herbs etc .Put the grated cheese on the pastry with the chopped tomatoes and add the liquid. Cook in the oven for around 30 - 40 minutes. The temperature will be 160 degrees centigrade or gas mark 5. Serve hot, warm or cold and can be eaten with salads or as a hot meal with wedges or jacket potatoes, beans or vegetables.

Ingredients : 2 chillis, 1 onion,4 cloves of garlic, 1lb of minced beef,3 pieces of fresh bread, fresh herbs or dried, Coriander,sage or parsley better, salt, pepper, 1 beef stock cube, 1 heaped teaspoon ground mixed spice, 1 egg.
Method - Squeeze the bread into a ball and grate it into a large plastic bowl. Then peel and finely chop the onion, garlic and chillis. add to the breadcrumbs and add the mince. Add the mixed spice, salt, pepper, herbs chopped and crumbled stock cube. Crack the egg into the mix and mix it all up with your hands. Squeeze into squash ball size portions and bake in the oven for around 20 minutes at about 170 degrees centigrade or gas mark 5. great served as a starter with salad as one or two balls. Good on buffets cold or hot or great with pasta, or rice and tomato sauce.

Water melon Chunks
Ingredients : 1carton of apple juice, half a water melon.
Method - Cut the water melon into six wedges. Take out all of the seeds that are visible. chop the melon into chunky pieces and put into nice glasses. add some apple juice and garnish with a twist of orange. Nice glasses will make them look more appetising.

Water Melon Wedge
Ingredients : half a water melon
Method - Cut the water melon into six wedges and take a plate and enjoy it as a nice snack, drink or starter like this. if the pips are swallowed they do not do you any harm, they are actually quite good, but not tasty and a bit bitter. Melon is great for your skin and very refreshing, especially in hot weather.

Mackerel For Grilled Mackerel And Salad
Ingredients : 4 small mackerel, olive oil,mixed herbs, salt, pepper, 2 lemons, 1 lettuce, half a cucumber, 2 tomatoes.
Method - Wash , gut, and wash again. The put on a tray and put three small slices on top of the fish to draw in the flavour of the lemon and herbs. Sprinkle with olive oil , herbs, lemon juice and salt and pepper. Grill until light brown and then turn over or bake in the oven for 15 - 20 minutes. Wash the lettuce, tomatoes, and cucumber and cut the lemons into wedges. Serve the mackerel hot or cold with salad and lemon.

Small Goujons Of Fish
Ingredients : 2 hake or coley fillets, half a cup of plain flour, 1 cup of water, 1 dessert spoon of vinegar, salt, pepper, half a teaspoon of baking powder, 1 pint of vegetable oil.
Method - Take the fillets of fish and take off the skins. Whisk the water, flour , vinegar, salt, pepper,and baking powder in a plastic bowl or stainless steel bowl. You will get a nice thick pourable batter. Leave it to rest for 20 minutes. Cut the fish into strips and fry in hot oil in a deep frying pan until the fish is golden brown on both sides. The fish will have to be turned over. The oil needs to be at least 180 degrees centigrade to get crispy. It is safer to use a deep fryer with a thermal cut out. When the fish is cooked shake off the oil over the fryer and put on a plate lined with dish paper or kitchen roll to take away any surplus oil. Serve a few goujons of fish or chicken hot as a starter with salad and lemon.

Turn up the heat and make sure there is hardly any oil in the pan now.Put in the chopped ham and chopped mushroom. the pan will be nice and hot so stir in the egg with the back of the fork or a spoon. spread it round until it sets. Turn the heat right down. Sprinkle the grated cheese on top and fold over the omlette. Leave for a few minutes. great served with salad as a starter or a lunch. As a meal it may be served with wedges, baked potato, salad and vegetables.

Boil in a pan for 10 minutes and then blend. Mix in two egg whites when the mix has cooled. Put it in a tray or pot covered in another tray or pot with boiling water in it and cook 170 degrees centigrade for half an hour. Cool for 1 hour after and then put in the fridge over night. The pate will be ready for eating, slicing the next day as it will have hardened off. Add washed and chopped salad for a starter and serve with toast or bread. For vegetarian pate do the same but replace the offal with soya or quorn.
