They are all generally based on 4 servings, but you could always make a double lot and freeze some.
Remember when you have let hot food cool down, on the side, for up to an hour. To put it in the refridgerater. Make sure the food is covered, or in a container etc. Try to eat it within 3 days, if you do not want it straight away. If you decide to freeze some, then, also put it in a sealed container, in the freezer and use it within 3 months. Always thaw your food out properly, before you cook it safely. To do that, Heat it to above 75 degrees centigrade. When thawing your food, ideally in the refridgerater, in a container overnight. So remember eat healthy, budget, do not be wasteful and use your time and energy efficiently. Chicken Jalfrezi 4 Portions
Ingredients - 1 x3ib chicken or( half pound of diced chicken).1 tin peaches,1 onion,tomato puree,2 cloves of garlic,1 red 1 green pepper,2 chicken stock cubes,curry powder,2 chillis,coriander,1 tin tomatoes,salt and pepper,ground mix spice.Margarine,plain flour.3 mugs long grain rice,two and a half pints of water.
Method - Disect the chicken and skin then de-bone and dice.Peel and finely chop the onion and garlic.Wash and chop the coriander and peppers.Put two heaped dessert spoons of margarine in a pan and fry the onion and garlic on medium heat.Add the chicken and finely chopped chillis after 5 minutes.Add 2 heaped dessert spoons of curry powder.Cook for 1 minute stirring.Then add two heaped dessert spoons of flour.Mix in until it goes pastey.Then add half a pint of water stirring in quickly.It will turn into a sauce.Add the chopped peaches and juice,some chopped coriander,1 teaspoon ground spice,chopped tomatoes some sal;t and pepper,chopped peppers,stock cubes crumbled.Simmer for 15 minutes,stirring every 5 minutes.Two pints of water should have been put on in another pan so when this boils add 3 mugs of long grain easy cook rice.Cook 10 - 15 minutes. A Roast ham dinner 4 Portions
Ingredients :4 Potatoes,1 small joint of ham 21b,4 carrots.peas,1 tomato,oil.
Method :Put the ham in 2 pints of water and simmer for 2 hours.While this is cooking peel and top and tail the carrots and slice the potatoes and tomatoes. Saute (lightly fry the potatoes in a little oil until cooked on both sides) do this in the last 20 minutes of the cooking of the ham. Also cook the sliced carrots in boiling water 10 minutes, cook the peas in boiling water 5 minutes before serving. Trim the fat off the ham and slice. It always slices easier when it is cold. Put every thing on the plate neatly when the vegetables are drained off. Garnish with tomatoes and parsley.

Ingredients :2 large potatoes,1 onion,3 garlic cloves,a quarter pound of mushrooms,1 broccoli head,4 vegetable stock cubes,salt,pepper,a small handful of grated cheese,9 eeggs,1 and half pints of milk,1 large teaspoon of English mustard,oil.
Method: Wash the potatoes and dry if skins are clean dice small if not peel and dice and lightly fry in a little oil until golden brown.Peel and chop the onion and garlic,and chop the broccoli and slice the mushrooms and wash and drain well.Whisk the cracked eggs in a bowl add the milk,cheese,mustard,salt and pepper,crumbled stock cubes,grated cheese.Put all the mix in a baking tray like this and add the other ingredients including the diced potatoes drained from oil.Bake in the oven 180oc or gas mark 5 for 40 minutes until golden brown.serve with salad after you have cut it into nice rectangle pieces and got it out carefully with a slice.Great for the family and filling.

A Healthier Full English Breakfast 4 Portions
Ingredients :4 slices bacon,4 sausages,1 tin baked beans,1 tin plum tomatoes or 2 fresh tomatoes,a quarter pound of mushrooms,4 hash browns,4 slices black pudding,5 eggs,half a cup of milk,4 slices of bread,oil.
Method :put the sausages on a rack over a tray first at 200oc in the oven for 10 minutes,then add the bacon and hash browns on a non stick tray.Put the sliced black pudding on another non stick tray with a little water.Mix one egg with the milk and salt and pepper.Cut the bread in half and coat the bread in the egg mix.In a tiny amount of oil in a non stick frying pan start frying two pieces at a time.While this is cooking open the tins and put the beans and tomatoes in two pans and put them on a low light or electricity no 2.Turn the french toast over so it is golden brown on both sides.The sausages will be cooked after 15 minutes so turn off the oven and as the french toast cooks put it in there on the tray.Put a pint of water in another pan and bring to the boil.Crack the eggs and put in one at a time on a medium light.Then put a lid on this pan for poached eggs.After a couple of minutes the yolk has a film over so they are ready.Serve up your breakfast and it should look like the picture.This breakfast is much healthier than a usual one.You can make it more healthier by having low fat sausages,lower salt,and buying bacon rindless,beans lower in sugar for example.I feel like eating this now,but it is sunday.

Meatballs,Tomato sauce and penne pasta 4 Portions
Ingredients :1lb minced beef,2 onions,4 cloves garlic,cinnamon,4 pieces of bread,parsley,1lb penne pasta,1 egg,cornflour,2 tins plum tomatoes,3 heaped dessert spoons of tomato puree,3 pints water,2 beef stock cubes,3 vegetable stock cubes,tomato ketchup,salt,pepper,1 teaspoon mixed herbs.
Method : Squash the bread into a ball and grate into breadcrumbs in a plastic bowl. Then add the mince,peeled and finely chopped 1 and half onion and 3 cloves of garlic,cinnamon, minced beef,1 egg, mixed herbs.mix up together and squeeze into golf ball size portions. The sauce, Put two tins of rough chopped tomatoes in a pan with the stock cubes, salt, pepper, pinch mixed herbs,1 clove chopped garlic, half chopped onion, tomato puree,ketchup and a pinch of cinnamon. Simmer for around 10 - 15 minutes. Method : Peel and finely chop the onions and garlic. Finely chop the chillis. Put the mince in a pan on a fairly low light and brown until a bit of fat has come out. Then add the onions, garlic and chillis. Cook for 5 minutes on slightly higher heat. Then add crumbled stock cubes, sprinkle of mixed herbs, salt, pepper, cinnamon, tomato puree, tinned tomatoes, chopped if you like tinned kidney beans washed. Simmer 10 minutes . Put the 2 pints of water on to boil and put in the rice, stir every so often so it does not stick together. Ingredients : 2 large potatoes, 1lb of minced lamb, 1 tin of tomatoes, 2 dessert spoons of tomato puree, 3 cloves of garlic, 1 aubergine, 1 red pepper, 1 green pepper, 2 beef or lamb stock cubes, mixed herbs, a handful of grated cheese, half a pint of milk, 4 dessert spoons of plain flour, salt, pepper, 1 teaspoon of ground mixed spice, An egg cup of vegetable oil, half a cup of water.2 dessert spoons of cornflour
Method : Put the mince in a pan and put the heat on low. Add the peeled and finely chopped onion and garlic.Then add the ground mixed spice, salt, pepper, crumbled stock cubes,any herbs if you like. Then sprinkle in the mix half of the flour. Mixing until you get a paste, this is called a roux, but you do not need to add any extra fat. When it has become a paste add half a mug of cold water, the tomatoes chopped,tomato puree, chopped peppers prepared,also any spice you like but not chillis, but just a little.Lightly fry the potatoes by saute, tossing so both sides brown.When done turn off the heat and leave to one side. If the sauce is a bit runny, mix the remainder of the flour with a little cold water and stir it in . This will thicken it. Top and tail and then slice the aubergine. Method : Crumble the flour and margarine together by rubbing between your fingers. Add half of the water and mix in. If too dry add more until you get a dough by kneading it a little but not too much. Next whisk the eggs and milk together, add some herbs and salt and pepper. Roll out the pastry to the size of your flan tin. Metal is better than pot or glass. Trim off the pastry and keep it thin. Pour in the egg mix and then sprinkle in the grated cheese. Rough chop the tomatoes taking out the eyes and add them. Bake in the oven fo 30 minutes at about 160 degrees centigrade. You can cook like this picture or lighter turn your oven down a little. it looks lighter when cut. Goes great with salad, jacket potato, wedges and beans. can be eaten hot, cold or warm.

Drain off the cooked pasta and mix in a large pan or dish with the sauce. Lovely served with salad.

Ingredients : 2 cauliflowers, 2 tomatoes, 2 hands full of grated cheese, a small bunch of parsley, 1 pint of milk, 3 dessert spoons of plain flour, 1 large onion, half a teaspoon of mustard, 2 vegetable stock cubes, half cup of water, salt, pepper.
Method : Cut the cauliflowers into quarters or smaller pieces and put in a pan with about 2 pints of water, simmer for no mare than 10 minutes. Put the milk in a pan to simmer and add the peeled and chopped onion, mustard, stock cubes crumbled, salt and pepper. Thicken with the flour and water mix or cornflour mixed with a little cold water. Then stir in the grated cheese. Drain off the cauliflower and put on 4 white plates. Put some sauce over the top and garnish with sliced tomato and sprigs of parsley. Enjoy a nice vegetarian meal.

Add the tomato puree, salt pepper, 2 tins of rough chopped tomatoes, mixed spice, stock cubes, chopped coriander, half cup of water, bring to the boil for 5 minutes and then add the diced chicken. cook the chicken for 10 minutes. by this time the pasta will be just al dente cooked with a bit of bite. drain and add the pasta to the sauce. cook a further 5 minutes and then serve. add a little chopped coriander to garnish and maybe a little grated nutmeg on top for flavour. great served on its own or with salad.

Put 2 pints of water on the boil for the rice, when it boils add the rice and cook 10 - 15 minutes. while this is cooking, put the chicken in with the sweet and sour sauce. cook for 5 minutes and then stir in the cornflour mix with water to thicken the sauce. Cook a further 5 minutes. The rice should be ready now so drain it off. Make a well on your plate with the rice and put the sweet and sour in the middle.

Roast Gammon And Mushroom Sauce 4 Portions
Ingredients : small shoulder of gammon, water, 1 bunch of parsley, 2 vegetable stock cubes, 1 large onion, 1 pint of milk, 2 dessert spoons of plain flour, salt pepper, 1 good handful of mushrooms.
Method : Simmer the shoulder of gammon in about 2 pints of water for about 2 hours. Slice the mushrooms, peel and chop the onion and wash and chop the parsley. Put the milk in a pan with the onion and simmer to the boil. add salt and pepper and the crumbled stock cubes. Mix up some flour and water thickener/ cornflour if gluten free. Stir in the hot milk. Add some parsley and the chopped mushrooms. Cook for 5 minutes. Take all the fat off the gammon and slice. Put in a serving dish and pour over the sauce. You are ready to serve with vegetables and boiled potatoes maybe.
