Cheese Omlette with salad
Ingredients :3 Medium sized eggs,salt and pepper.1 teaspoon vegetable oil,small hanfull of grated cheese,1 tomato,lettuce,cucumber,carrot,onion.
Method: Peel the onion and carrot and top and tail and finely chop.Cut tomato, cucumber and shred lettuce and wash.For the omlette put the oil in a small frying pan and heat it a little,while this is on crack the eggs into a cup and beat up with a dessert spoon,add a little salt and pepper to the beaten egg.

Frittata
Ingredients :2 large potatoes,1 onion,3 garlic cloves,a quarter pound of mushrooms,1 broccoli head,4 vegetable stock cubes,salt,pepper,a small handful of grated cheese,9 eeggs,1 and half pints of milk,1 large teaspoon of English mustard,oil.
Method: Wash the potatoes and dry if skins are clean dice small if not peel and dice and lightly fry in a little oil until golden brown.Peel and chop the onion and garlic,and chop the broccoli and slice the mushrooms and wash and drain well.Whisk the cracked eggs in a bowl add the milk,cheese,mustard,salt and pepper,crumbled stock cubes,grated cheese.Put all the mix in a baking tray like this and add the other ingredients including the diced potatoes drained from oil.Bake in the oven 180oc or gas mark 5 for 40 minutes until golden brown.serve with salad after you have cut it into nice rectangle pieces and got it out carefully with a slice.Great for the family and filling.
