Chicken Salad 4 people
Ingredients: 2 cooked chicken breast, half an iceberg lettuce, 2 tomatoes, half a cucumber, 1 large carrot, 1 green pepper, 1 bunch of parsley.
Method :Slice up 1 skinless cooked chicken breast.Then take the stem off the lettuce and rip it up,rinse and put on a white plate.Next top and tail the cucumber,take the eyes out of the tomatoes,cut up and wash the salad and add to the plates.Next peel,top and tail the carrot,wash and grate it,then slice the pepper and wash the parsley. Add the sprinkled grated carrot,sliced cooked chicken,peppers and parsley. You now have a healthy salad.Remember a salad can become as fatty as a bag of chips if you start having mayonnaise,cream,butter on bread etc. So if you are hungry have a bigger salad. You will probably lose weight as it is mostly water,but fills you up.

B.L.T. Bacon,Lettuce and Tomato Baguette
Ingredients: Chopped cooked bacon, mayonnaise, lettuce, cucumber, tomato, lettuce, baguette, grated carrot.
Method : This is great when you have cooked extra bacon after your sunday breakfast. Wash prepare and finely chop the salad,make sure the carrot was topped and tailed.Take a nice warm baguette,which you can do for 10 seconds in the microwave or even less.Lightly butter the baguette when it is cut open with a low fat butter or spread.Add some chopped salad inside.Then chop up the bacon and mix it with a little low fat mayonnaise and add it into the baguette.Cut in half and use the remaining salad as a garnish. Remember to trim the fat off the bacon before you add it to your baguette.

Rice Salad
Ingredients: 1 large mug of long grain rice, 1 handfull of peas, chopped carrot, a handful of sweetcorn, 1 red and 1 green pepper, salt, pepper.
Method : Cook the long grain rice in boiling water for 10 minutes,then cool it down under running cold water. Add the ingredients above to give colour,with salt,pepper and herbs for flavour. This is great healthy as a cold salad or as a hot meal. It could even be turned into a broth by adding stock, or rissotto. If you like kidney beans,add those but wash them properly if tinned,cook them properly if raw.

Sliced Cucumber Salad
Ingredients 2 cucumbers
Method : This is dead easy,top and tail the cucumbe. r,wash it and slice it very thinly. Then get a plate and make a spiral pattern. Cucumber is great to eat any time,refreshing too

Potato Salad
Ingredients: 2 large potatoes, 1 onion, 2 dessert spoons of mayonnaise, 1 celery stick, 1 orange, a handful of chopped parsley, salt, pepper, half a tomato.
Method : Take two large potatoes,if the skins are clean leave them on and dice.If not then peel them.Peel and finely chop the onion and wash and chop the parsley.Slice the orange and cucumber. Turn the celery stick into fingers. The potatoes will take 5 - 10 minutes to cook in boiling water.They will have to be cooled and drained then.When the potatoes are completely cool,then mix with mayonnaise,chopped parsley,chopped onion and some salt and pepper for flavour. Mix it all up in a bowl then put on a white plate and add the colourful garnish. This is lovely and filling,great for a family buffet or on its own. If there are more of you just cook more potatoes.

Ingredients: 1 chicken cut up into eight portions, a handful of plain flour, 2 dessert spoons of curry powder, 1 teaspoon of ground mixed spice, half a teaspoon of ginger, salt, pepper, 2 crumbled chicken stock cubes. 1 cup of vegetable oil, 3 dessert spoons of vegetable oil.
Method : This one is really easy. First get a bowl and mix up all of the dried ingredients together. Next skin all the chicken pieces and then score them. After this get an oven tray and rub oil on all the chicken pieces and the press it through the dry mix. When you have done this press some more on the chicken and bake it for about half an hour until golden brown. It marinates better if it is left in the fridge over night and you bake it the next day. Great with carribean food or on a buffet or just a snack.

This joint is usually about 5lb in weight. It needs to be above 75 degrees centigrade in the middle with a thermometer. Boiling it first will release much of the saltiness. Allow to cool and slice cold it is much easier but trim the fat off first.

Ingredients Half a pound of plain flour, a quarter pound of margarine or butter, half a pint of milk, 3 eggs, a small handful of cheese, salt, pepper, mixed herbs, parsley, radishes.

Find a suitable mini quiche tray and cutter. Then roll out the pastry and line the tartlet tin with the pastry. Add the mix and a little cheese in each one. Cook in the oven at about 180 degrees centigrade. Allow to cool,great for buffets or snacks.

Ingredients: Half iceberg lettuce, cherry tomatoes, cucumber, watercress, rocket lettuce, 4 celery sticks.

Ingredients : Green olives, sliced orange, sliced onion, chopped cucumber, chopped lettuce, chopped lettuce, chopped coriander, a sprinkle of olive oil.

Ingredients : 1 pack of small savoury biscuits, parma ham, prawns, creamed cheese, salami, parsley, cherry tomatoes, lemon.
